Ingredients
12 oz penne pasta
2 chicken breasts, sliced
2 tablespoons olive oil
3 garlic cloves, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tablespoons Cajun seasoning
1 ½ cups heavy cream
½ cup grated Parmesan cheese
⅓ cup sun-dried tomatoes, chopped
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Cook the penne pasta in salted boiling water until al dente, then drain and set aside.
2. Season the sliced chicken with Cajun seasoning, salt, and pepper.
3. In a skillet over medium-high heat, heat olive oil and sear the chicken until golden and fully cooked. Remove and set aside.
4. In the same pan, sauté the garlic, red bell pepper, and green bell pepper until softened.
5. Pour in the heavy cream, add more Cajun seasoning to taste, and bring to a simmer until slightly thickened.
6. Stir in sun-dried tomatoes and Parmesan until melted and smooth.
7. Add the cooked chicken and pasta back to the skillet, tossing to coat everything evenly in the sauce.
