1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Custard Filling:

4 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

Brûlée Topping:

1/4 cup granulated sugar (for sprinkling and torching)

Ground cinnamon (optional)


Instructions

  1. Cream butter and sugar together until fluffy. Add egg and vanilla, mix well.
  2. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture to form dough.
  3. Chill dough for 30 minutes.
  4. Mix cream cheese, sugar, egg yolk, and vanilla until smooth to make custard.
  5. Roll dough into 1.5 tbsp-sized balls, flatten, and make an indent in each.
  6. Fill each indent with 1 tsp of custard.
  7. Bake at 350°F (175°C) for 12-14 minutes. Let cool on the sheet.
  8. Sprinkle tops with sugar (and cinnamon if using), then torch until caramelized.
