Ingredients

For the Chicken:

2 boneless, skinless chicken breasts (pounded to ½-inch thickness)

1 ½ cups all-purpose flour

¼ cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon cayenne pepper (optional)

2 large eggs

¾ cup buttermilk

Vegetable oil (for frying)

For the Gravy:

2 tablespoons butter

2 tablespoons all-purpose flour

1 ½ cups milk

Salt and black pepper to taste


Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even ½-inch thickness and season with salt and pepper.
  2. Set Up Breading Station: In one bowl, mix flour, cornstarch, baking powder, and seasonings. In another, whisk together eggs and buttermilk.
  3. Bread the Chicken: Dredge each piece in the flour mixture, then dip into the buttermilk mixture, and coat again in the flour mixture. Let the breaded chicken rest for 5 minutes.
  4. Fry the Chicken: Heat 1 inch of vegetable oil in a skillet to 350°F (175°C). Fry the chicken for 3-4 minutes per side until golden brown and cooked through. Drain on a wire rack.
  5. Make the Gravy: In a pan, melt butter over medium heat. Stir in flour and cook for 1 minute. Slowly add milk, whisking constantly, until thickened. Season with salt and pepper.
