Ingredients

1 pound ground beef

1 packet taco seasoning

1/2 cup tomato sauce

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

6 large flour tortillas

1/4 cup oil (for frying)

Toppings: sour cream, pico de gallo, guacamole (optional)


Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

2. Stir in taco seasoning and tomato sauce. Simmer for 5 minutes until thickened.

3. Warm tortillas in the microwave or skillet until soft and pliable.

4. Add a portion of the beef mixture to the center of each tortilla.

5. Sprinkle both cheeses over the beef filling.

6. Fold in the sides and roll tightly to form a burrito.

7. In a skillet, heat oil over medium heat. Fry chimichangas seam-side down first.

8. Turn to brown all sides until golden and crispy (2–3 minutes per side).

9. Remove and drain on paper towels.

10. Serve warm with your favorite toppings.

Notes

For an even crispier finish, brush chimichangas with oil and bake at 425°F for 20 minutes.
