2 pounds baby Yukon Gold potatoes
2 tablespoons olive oil
3 tablespoons unsalted butter, melted
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon paprika
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
2. Wash and dry the potatoes well, then cut them in half. Quarter any larger potatoes so the pieces are similar in size.
3. Place the potatoes in a large bowl and toss with olive oil, salt, black pepper, Italian seasoning, and paprika until evenly coated.
4. Arrange the potatoes cut-side down in a single layer on the prepared baking sheet.
5. Roast for 30 to 35 minutes, or until the potatoes are fork-tender and deeply golden on the edges.
