Ingredients

2 boneless, skinless chicken breasts (pounded evenly)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 eggs, beaten

Olive oil spray

Optional: chopped parsley or lemon wedges for garnish


Instructions

  1. Pat chicken breasts dry and pound to an even thickness.
  2. In one bowl, beat the eggs. In another, mix panko, Parmesan, and seasonings.
  3. Dip chicken into egg wash, then coat fully with breadcrumb mixture.
  4. Preheat air fryer to 375°F (190°C) for 3 minutes.
  5. Spray air fryer basket with olive oil, place chicken inside without overlapping.
  6. Spray tops of chicken lightly with oil.
  7. Cook for 10 minutes, flip, then cook another 6–8 minutes until golden and internal temp hits 165°F (74°C).
  8. Let rest for 2–3 minutes before serving. Garnish as desired.
