Ingredients
1 lb carrots
1 1/2 tablespoons olive oil
1/3 cup grated parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Peel the carrots and cut them into thick diagonal slices or large coins.
3. Boil the carrots in salted water for 12 to 15 minutes, until fork tender but not falling apart.
4. Drain the carrots well and let them sit for 1 to 2 minutes so excess steam escapes.
5. Arrange the carrots on the prepared baking sheet with a little space between each piece.
6. Gently smash each carrot piece with the bottom of a glass or measuring cup until flattened but still intact.
7. In a small bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper.
8. Brush or drizzle the seasoned oil over the smashed carrots.
9. Sprinkle the parmesan evenly over the tops.
10. Roast for 20 to 25 minutes, until the edges are crispy and golden brown.
11. Garnish with chopped parsley and serve hot.
Notes
Do not overboil the carrots or they will become too soft and fall apart when you try to smash them.
