Ingredients

2 pounds ground beef 80/20

2 large yellow onions thinly sliced

1 packet onion soup mix

1 cup plain breadcrumbs

2 large eggs

1/2 cup beef broth

1 tablespoon Worcestershire sauce

3 cloves garlic minced

6 slices provolone or Swiss cheese

1 tablespoon fresh thyme chopped

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook until deeply golden and caramelized about 15 to 20 minutes.

2. In a large bowl combine ground beef onion soup mix breadcrumbs eggs beef broth Worcestershire sauce garlic salt pepper thyme and half of the caramelized onions. Mix gently.

3. Shape mixture into a loaf and place on parchment sling inside crockpot.

4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until internal temperature reaches 160 degrees Fahrenheit.

5. Top with remaining onions and cheese slices and cook additional 10 to 15 minutes until cheese melts.

6. Let rest 10 minutes before slicing and serving.

Notes

For best flavor caramelize the onions slowly until deep golden brown. Rushing this step will reduce the rich French onion taste.
