Ingredients

2 boneless skinless chicken breasts

2 cans white beans, drained and rinsed

1 can corn, drained

1 can diced green chiles

1 small onion, chopped

3 cloves garlic, minced

3 cups chicken broth

8 ounces cream cheese, cubed

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sour cream

1 cup shredded cheddar cheese

2 tablespoons chopped fresh cilantro or parsley


Instructions

1. Place the chicken breasts in the bottom of the crockpot.

2. Add the white beans, corn, diced green chiles, chopped onion, and minced garlic.

3. Pour in the chicken broth and season with cumin, chili powder, oregano, salt, and black pepper.

4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.

5. Remove the chicken, shred it with two forks, and return it to the crockpot.

6. Add the cream cheese and stir until fully melted and smooth.

7. Stir in the sour cream until the chili is creamy and well combined.

8. Ladle into bowls and top with shredded cheddar cheese and chopped cilantro or parsley before serving.

Notes

Do not add the cream cheese too early, or it can separate during the long cook time. Stir it in near the end for the smoothest, creamiest chili.
