Ingredients
2 pounds boneless skinless chicken thighs
1/3 cup hoisin sauce
3 tablespoons soy sauce
3 tablespoons honey
2 tablespoons brown sugar
1 teaspoon Chinese five spice powder
4 cloves garlic minced
1 tablespoon fresh ginger grated
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon red food coloring optional
1/4 teaspoon black pepper
Instructions
1. In a medium bowl, whisk together the hoisin sauce, soy sauce, honey, brown sugar, Chinese five spice, garlic, ginger, rice vinegar, sesame oil, optional red food coloring, and black pepper until smooth.
2. Reserve about 2 tablespoons of the marinade for brushing later, then coat the chicken thighs with the remaining marinade.
3. Cover and refrigerate the chicken for at least 2 hours or up to overnight.
4. Preheat the oven to 400°F and line a baking sheet or roasting pan with foil. Place a wire rack on top if available.
5. Arrange the marinated chicken in a single layer and roast for 20 to 25 minutes, brushing once or twice with the reserved marinade.
6. Broil for 2 to 4 minutes until the edges are slightly charred and glossy, watching closely so the sugars do not burn.
7. Let the chicken rest for 5 minutes before slicing and serving.
