Ingredients

2 Ribeye or Sirloin steaks

8 tablespoons unsalted butter, softened

2 tablespoons chopped fresh parsley

1 tablespoon chopped chives

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

1/4 teaspoon red pepper flakes

Salt and freshly ground black pepper to taste

1 tablespoon olive oil for cooking


Instructions

1. In a medium bowl, mix the softened butter with parsley, chives, garlic, lemon juice, lemon zest, Dijon mustard, paprika, and red pepper flakes. Season with salt and pepper.

2. Roll the mixture into a log using parchment paper and chill in the fridge until firm.

3. Pat steaks dry and season with salt and pepper.

4. Heat a cast-iron skillet or grill pan over high heat and add olive oil.

5. Sear steaks for 3–4 minutes per side for medium-rare, or to your desired doneness.

6. Let the steaks rest for 5 minutes off the heat.

7. Slice a round of cowboy butter and place it on the warm steak to melt.

8. Slice steak against the grain and spoon melted butter over before serving.

Notes

Letting the butter firm up in the fridge allows for clean slicing and better presentation.
