1 pound lean ground turkey

2 medium sweet potatoes peeled and cubed

2 tablespoons olive oil divided

1 small yellow onion finely chopped

2 cloves garlic minced

1 teaspoon kosher salt divided

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon crushed red pepper flakes optional

1/2 cup water or low sodium chicken broth

1 cup prepared pico de gallo or chopped tomatoes

1 cup prepared guacamole or mashed avocado

1/2 cup plain Greek yogurt or sour cream

1/2 cup crumbled feta or queso fresco

1/4 cup chopped fresh cilantro

1 lime cut into wedges


Instructions

1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.

2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil and a big pinch of the kosher salt, then spread them out in a single layer on the baking sheet.

3. Roast the sweet potatoes for 20 to 25 minutes, stirring halfway through, until they are caramelized on the edges and very tender.

4. While the potatoes roast, heat the remaining tablespoon of olive oil in a large skillet over medium heat and sauté the chopped onion for 3 to 4 minutes until softened.

5. Add the minced garlic and cook for 30 seconds, then crumble in the ground turkey and cook, breaking it up with a spoon, until no longer pink.

6. Season the turkey with the remaining salt, black pepper, cumin, chili powder, smoked paprika, and red pepper flakes, then pour in the water or broth and simmer for 3 to 5 minutes until slightly thickened and saucy.

7. Lightly mash the roasted sweet potatoes with a fork right on the baking sheet or in a bowl, adjusting salt and pepper to taste.

8. To assemble, divide the mashed sweet potatoes among four bowls, spoon the seasoned turkey over the top, then add pico de gallo, guacamole, Greek yogurt, crumbled cheese, and cilantro.
