Ingredients
500g chicken thighs
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/3 cup sun-dried tomatoes, chopped
1/2 cup grated parmesan cheese
2 cups fresh spinach
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil or butter
Instructions
1. Season chicken thighs with salt and pepper, then sear in a skillet with olive oil until golden on both sides.
2. Transfer chicken to the slow cooker. Add garlic, sun-dried tomatoes, and Italian seasoning.
3. Pour in chicken broth and heavy cream. Gently stir to coat chicken evenly.
4. Cover and cook on low for 4–5 hours or high for 2–3 hours.
5. Add spinach and parmesan cheese during the last 15–30 minutes. Stir to combine.
6. Once spinach wilts and sauce thickens, serve hot over your choice of sides.
Notes
Use chicken breasts if preferred, but reduce cooking time to avoid dryness.
For a thicker sauce, let it simmer uncovered for 10 minutes before serving or add a slurry of cornstarch and water.
