These soft, creamy coconut bites are sweet, fluffy, and dressed in pretty pastel shades that look perfect on an Easter dessert table. Whether you need a quick breakfast-side sweet, a healthy snack alternative for portion-friendly treats, an easy recipe for holiday entertaining, or fun food ideas for brunch and dessert boards, these coconut tails are simple to make and always adorable to serve.

Ingredients

14 oz sweetened condensed milk

5 cups sweetened shredded coconut, divided

2 cups powdered sugar

1 tsp vanilla extract

1 pinch salt

pink food coloring, optional

yellow food coloring, optional

blue food coloring, optional

Instructions

1. In a large mixing bowl, stir together the sweetened condensed milk, powdered sugar, vanilla extract, and salt until smooth.

2. Add 4 cups of the shredded coconut and mix until a thick, sticky mixture forms.

3. Divide the mixture into separate bowls if using different pastel colors, then tint each portion with a small drop of food coloring and mix until evenly colored.

4. Cover and chill the mixture in the refrigerator for 20 to 30 minutes until easier to handle.

5. Scoop and roll the chilled mixture into small bite-sized balls.

6. Roll each ball in the remaining 1 cup of shredded coconut until fully coated.

7. Place the coconut tails on a lined tray or plate and chill for another 15 to 20 minutes before serving.

Notes

Do not skip the chilling time, or the mixture may feel too soft and sticky to roll neatly.
