Ingredients

1 3/4 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar

2 teaspoons ground cinnamon

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

3/4 cup buttermilk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1 1/2 cups peeled and finely chopped apples

Streusel Topping:

1/3 cup brown sugar

1/4 cup all-purpose flour

1 teaspoon ground cinnamon

2 tablespoons unsalted butter, cold and cubed


Instructions

1. Prepare the streusel by mixing brown sugar, flour, and cinnamon, then cut in cold butter until crumbly. Chill.

2. Preheat oven to 375°F (190°C) and line a muffin tin.

3. In a large bowl, whisk together flour, sugars, cinnamon, baking powder, baking soda, and salt.

4. In another bowl, whisk eggs, buttermilk, melted butter, and vanilla extract.

5. Combine wet and dry ingredients, stirring until just mixed. Fold in chopped apples.

6. Divide batter among muffin cups, filling 3/4 full. Top generously with streusel.

7. Bake 18–22 minutes or until a toothpick comes out clean. Cool slightly before serving.

Notes

These muffins taste best fresh but freeze beautifully for later.
