Ingredients

4 cups chicken broth

2 large eggs

1 tablespoon cornstarch

1 teaspoon grated ginger

1 clove garlic, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

2 tablespoons chopped green onions

1/8 teaspoon white pepper

Instructions

1. In a medium saucepan, combine chicken broth, garlic, and ginger. Bring to a boil over medium-high heat.

2. In a small bowl, stir the cornstarch with 2 tablespoons of water until smooth. Add to the boiling broth and stir until slightly thickened.

3. Stir in soy sauce and sesame oil. Lower heat to a gentle simmer.

4. Slowly drizzle in the beaten eggs while stirring the broth in a circular motion to create egg ribbons.

5. Turn off the heat, season with white pepper, and garnish with chopped green onions. Serve hot.

Notes

For extra protein, stir in soft tofu cubes right after adding the eggs.

If you like a spicy kick, add a pinch of chili flakes or a dash of hot sauce before serving.
