Ingredients

1 tablespoon olive oil

1 medium onion, diced

1 pound ground beef

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1.5 pounds baby potatoes, halved

1/4 cup water or broth

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 minutes until soft.

2. Add ground beef to the skillet. Break it apart and cook until browned, about 5–7 minutes.

3. Stir in garlic, paprika, salt, and pepper. Cook for another minute to release the flavors.

4. Add halved baby potatoes and stir. Pour in the water or broth, cover the skillet, and let it simmer on low heat for 15–20 minutes until potatoes are tender.

5. Uncover and let any liquid evaporate. Let potatoes crisp slightly.

6. Sprinkle with fresh parsley and serve hot.

Notes

If using larger potatoes, chop them into bite-sized pieces to cook evenly.

To make it cheesy, sprinkle shredded cheddar on top during the last 2 minutes of cooking.
