Ingredients
1 pound ground chicken
6 cups green cabbage, thinly sliced
1 1/2 cups carrots, julienned
3 cloves garlic, minced

3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon honey
1/4 teaspoon red pepper flakes
3 green onions, sliced
1 tablespoon olive oil
Instructions
1. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and red pepper flakes.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the ground chicken and cook for 5 to 6 minutes, breaking it apart, until fully cooked and lightly browned.
4. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
5. Add the cabbage and carrots to the skillet and toss well.
6. Cook for 5 to 7 minutes, stirring often, until the cabbage is wilted and the carrots are tender-crisp.
7. Pour the sauce over the mixture and stir well to coat everything evenly.
8. Cook for 2 more minutes until the sauce lightly thickens and clings to the chicken and vegetables.
9. Remove from the heat, top with sliced green onions, and serve warm.
Notes
Do not overcrowd the pan or rush the browning step on the ground chicken, because properly browned chicken gives the stir fry much better flavor and keeps the final dish from turning watery.
