Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

3 carrots, peeled and chopped

4 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon Italian seasoning

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 cups uncooked rotini pasta

Chopped parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook for 2–3 minutes until softened.
  3. Stir in garlic; cook for 30 seconds.
  4. Add ground beef and brown completely. Drain any excess fat.
  5. Stir in carrots, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Pour in beef broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Add pasta and continue simmering for 10–12 minutes until tender.
  9. Adjust seasoning to taste and garnish with parsley.
