Ingredients

1 tablespoon unsalted butter (melted)

3 large eggs

1 cup whole milk

1 cup all-purpose flour

1/2 teaspoon salt

Nonstick spray or neutral oil (for greasing)


Instructions

1. Preheat oven to 450°F and place your muffin tin inside to heat.

2. In a blender or bowl, mix eggs, milk, flour, and salt until smooth. Let batter rest for 10 minutes.

3. Remove muffin tin, grease each cup quickly, and fill halfway with batter.

4. Bake at 450°F for 15 minutes, then reduce to 350°F and bake for another 15–20 minutes.

5. Remove popovers and pierce with a knife to release steam. Serve warm.

Notes

Don’t open the oven while baking or they may collapse.
