Ingredients
2/3 cup coconut flour
1/2 cup granulated keto sweetener
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened shredded coconut
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the coconut flour, keto sweetener, baking powder, and salt.
3. In another bowl, whisk the melted butter, eggs, and vanilla extract until smooth.
4. Pour the wet mixture into the dry ingredients and stir until a dough forms. Fold in the shredded coconut.
5. Let the dough rest for 2 to 3 minutes so the coconut flour can absorb the moisture.
6. Scoop small portions of dough onto the prepared baking sheet and gently flatten each cookie.

Notes
Do not add extra coconut flour if the dough seems soft at first, because coconut flour continues absorbing moisture as it rests and too much will make the cookies dry.
