500g boneless skinless chicken thighs

1 egg

3 tablespoons cornstarch

1 tablespoon soy sauce (for marinade)

1 cup vegetable oil (for frying)

2 tablespoons soy sauce (for sauce)

3 tablespoons brown sugar

1 tablespoon rice vinegar

2 teaspoons sesame oil

2 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame seeds, toasted

2 tablespoons scallions, chopped


Instructions

1. In a bowl, combine chicken, egg, 1 tablespoon soy sauce, and cornstarch. Let it marinate for 15 minutes.

2. Heat oil in a skillet over medium-high heat. Fry chicken pieces in batches until golden and crispy. Set on paper towels.

3. In a separate saucepan, mix soy sauce, brown sugar, vinegar, sesame oil, garlic, and ginger. Simmer until slightly thickened.

4. Toss fried chicken into the sauce until well coated.

5. Sprinkle with sesame seeds and scallions before serving. Serve hot with rice or vegetables.

Notes

For even crispier chicken, double-coat with cornstarch before frying.
