Ingredients

2 cloves garlic, minced
5 cups fresh spinach
8 large eggs
1/2 cup milk
1 1/2 cups cottage cheese
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
Instructions
1. Preheat the oven to 375°F and grease an 8×8-inch baking dish.
2. Heat the olive oil in a skillet over medium heat.
3. Add the onion and cook for 3 to 4 minutes until softened.
4. Stir in the garlic and cook for 30 seconds.
5. Add the spinach and cook just until wilted and any extra moisture has evaporated.
6. In a large bowl, whisk together the eggs, milk, cottage cheese, salt, black pepper, and nutmeg.
7. Stir in the cooked spinach mixture, cheddar cheese, and Parmesan cheese.

Notes
