  • Author: Nora McKenney
  • Total Time: 25 minutes
  • Yield: 8-10 patties

Description

Crispy on the outside and tender on the inside, these Easy Veggie Patties are a delicious way to enjoy a variety of vegetables in one bite. Made with fresh broccoli, carrots, and a blend of simple seasonings, they are perfect as a snack, side dish, or even a light meal. They can be pan-fried, baked, or air-fried for a healthier alternative. Enjoy them with your favorite dipping sauce or as a filling for wraps and sandwiches!

Ingredients

1 cup broccoli, finely chopped

½ cup carrots, grated

½ cup breadcrumbs

¼ cup red onion, finely chopped

1 egg

¼ cup grated cheese (cheddar or parmesan)

2 tablespoons all-purpose flour (or chickpea flour for gluten-free option)

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon paprika (optional)

2 tablespoons olive oil (for frying)

Instructions

  1. Prepare the Vegetables: Finely chop the broccoli and red onion. Grate the carrots and squeeze out excess moisture if needed.
  2. Mix Ingredients: In a large bowl, combine the chopped vegetables, breadcrumbs, cheese, flour, and seasonings. Add the egg and mix until well combined. If the mixture is too wet, add more breadcrumbs; if too dry, add a splash of water.
  3. Shape the Patties: Form small, round patties (about ½ inch thick) and place them on a plate. Let them rest for 5 minutes.
  4. Cook the Patties: Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 3-4 minutes per side until golden brown and crispy.
  5. Drain and Serve: Transfer the patties to a paper towel-lined plate to absorb excess oil. Let them cool slightly before serving.
