Ingredients
2 boneless skinless chicken breasts
1 cup long grain white rice
2 cups chicken broth
1 can cream of chicken soup
1 can cream of mushroom soup
1 small onion, finely chopped
2 cloves garlic, minced
1 1/2 cups shredded cheddar cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley
Instructions
1. In the crockpot, stir together the cream of chicken soup, cream of mushroom soup, chicken broth, chopped onion, minced garlic, salt, and black pepper until smooth.
2. Add the chicken breasts and spoon some of the mixture over the top.
3. Cover and cook on low for 4 to 5 hours, until the chicken is fully cooked and tender.
4. Remove the chicken, shred it with two forks, and return it to the crockpot.
5. Stir in the uncooked long grain white rice and mix well.
6. Cover and cook on low for 1 to 1 1/2 hours more, until the rice is tender.
7. Stir in the butter and shredded cheddar cheese until melted and creamy.
8. Sprinkle with chopped parsley and serve warm.
