Ingredients

16 oz cream cheese (full-fat, block style)

1/3 cup dried cranberries

1/4 cup chopped yellow bell peppers

1/4 cup sliced Kalamata or black olives

2 tablespoons chopped fresh dill

2 tablespoons chopped fresh parsley

2 tablespoons toasted pumpkin seeds (pepitas)

1/4 teaspoon cracked black pepper

Optional: 2 tablespoons crumbled feta or goat cheese


Instructions

1. Chop dried cranberries, peppers, and olives into small, even pieces. Toast pumpkin seeds in a dry skillet for 2–3 minutes.

2. In a large bowl, mix softened cream cheese until smooth.

3. Fold in all prepared mix-ins: cranberries, peppers, olives, dill, parsley, and pumpkin seeds. Add black pepper to taste.

4. Transfer mixture to plastic wrap and form into a tight log. Wrap and refrigerate for 2+ hours or overnight.

5. Before serving, unwrap and place on a board. Garnish with extra olives, herbs, or a drizzle of olive oil.

6. Serve with crackers, crostini, or fresh vegetables.

Notes
