Ingredients
1 lb ground beef
1 1/2 cups cooked rice (white or brown)
1 large yellow onion, thinly sliced
1 packet French onion soup mix
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1/2 cup beef broth
2 cups shredded mozzarella or cheddar cheese
2 tbsp butter
1/2 tsp kosher salt (to taste)
1/4 tsp black pepper (to taste)
Instructions
1. Cook ground beef in a skillet over medium heat until browned; drain grease.
2. Add butter and onions; cook until caramelized.
3. Mix beef, onions, rice, soup mix, cream of mushroom soup, sour cream, and broth. Season.
4. Spread into a greased 9×13-inch dish; top with cheese.
5. Bake at 350°F (175°C) for 25–30 minutes until bubbly and lightly golden.
6. Rest 5 minutes before serving.
Notes
Swap part or all of the cheese for Gruyère for classic French onion flavor.
If using fresh rice, let it steam off for 5–10 minutes so the casserole stays fluffy.
