Ingredients

1 large head romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cucumber, sliced into rounds

1/2 red onion, thinly sliced

1 cup Kalamata olives

6 oz feta cheese, cubed

2 tablespoons red wine vinegar

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

 


Instructions

  1. Wash and dry all vegetables thoroughly.

  2. Chop romaine into bite-sized pieces.

  3. Slice cucumber into rounds, halve the cherry tomatoes, and thinly slice the red onion.

  4. In a large salad bowl, combine romaine, cucumbers, tomatoes, and red onion.

  5. Add the Kalamata olives and cubed feta cheese.

  6. In a small bowl, whisk together red wine vinegar, olive oil, oregano, salt, and pepper.

  7. Drizzle dressing over salad right before serving.

  8. Gently toss to coat everything evenly.
