Ingredients
1 1/2 lbs Yukon Gold potatoes, diced
14 oz smoked Polish sausage, sliced
1 large yellow onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp unsalted butter
1 tsp paprika
3/4 tsp salt
1/2 tsp black pepper
1 tbsp fresh parsley, chopped (optional)
Instructions
1. Wash, peel, and dice the potatoes. Slice the sausage and chop onion and garlic.
2. (Optional) Parboil potatoes for 5–6 minutes, drain, and pat dry.
3. In a large skillet, heat oil and cook sausage until browned. Remove and set aside.
4. Add oil and butter to the same pan. Fry potatoes in a single layer until golden.
5. Stir in onions and garlic. Sauté until onions are soft and golden.
6. Return sausage to pan. Add paprika, salt, pepper, and stir to combine.
7. Cook a few more minutes until everything is heated through. Garnish with parsley.
