Ingredients
Cookies:
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups chopped pecans, toasted
Frosting:
2 cups powdered sugar
2–3 tbsp milk
1/2 tsp vanilla extract
Optional: pinch of cinnamon
Extra chopped pecans for garnish
Instructions
- Toast the Pecans: Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 6–8 minutes. Cool completely.
- Mix the Dough: Cream butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then vanilla.
- Combine Dry Ingredients: Whisk flour, baking soda, and salt. Add to wet mixture and stir until just combined. Fold in toasted pecans.
- Shape & Bake: Scoop dough onto parchment-lined sheets, spacing 2 inches apart. Bake for 10–12 minutes until edges are golden. Cool on sheet 5 mins, then move to rack.
- Make the Frosting: Whisk powdered sugar, milk, and vanilla until smooth. Add cinnamon if using.
