Ingredients
1 cup fruit puree
1 ½ cups granulated sugar
½ cup light corn syrup
6 tablespoons unsalted butter
½ cup heavy cream
¼ teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Line an 8×8-inch square pan with parchment paper and lightly grease it.
2. In a saucepan, combine fruit puree, sugar, corn syrup, butter, and salt. Stir over medium heat until butter melts and mixture starts boiling.
3. Insert candy thermometer and cook until mixture reaches 240°F (soft ball stage), stirring occasionally.
4. Slowly add heavy cream while stirring, return to heat, and cook back to 240°F.
5. Remove from heat, stir in vanilla, and pour into prepared pan.
6. Let cool for 2–3 hours, then lift from pan and cut into bite-sized pieces.
7. Wrap individually in wax paper for storage or gifting.
