Ingredients
200g green beans
150g mushrooms, sliced
2 tablespoons butter
1 tablespoon olive oil
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon lemon zest (optional)
Instructions
1. Fill a pot with water and bring to a boil. Add green beans and cook 3–4 minutes until bright green. Drain and place in an ice bath. Pat dry.
2. Heat olive oil in a skillet over medium-high heat. Add mushrooms and sear undisturbed for a few minutes. Stir and cook until golden brown. Set aside.
3. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 30–60 seconds until fragrant.
4. Add green beans and mushrooms back into skillet. Season with salt and pepper. Sauté for 2–3 minutes. Finish with lemon zest if using.
