Ingredients

1 lb sirloin steak, cut into 1-inch cubes

1.5 lbs baby potatoes, halved or quartered

4 tbsp unsalted butter, divided

4 cloves garlic, minced

2 tbsp olive oil

1 tsp Italian seasoning

Salt and black pepper, to taste

Chopped fresh parsley, for garnish


Instructions

  1. Wash and cut the potatoes into halves or quarters. Pat dry.
  2. In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium heat.
  3. Add potatoes, season with salt, pepper, and Italian seasoning. Cook 15 minutes, turning occasionally, until golden and tender. Remove and set aside.
  4. Pat steak dry and season with salt and pepper.
  5. Increase heat to medium-high. Add 1 tbsp olive oil to the skillet.
  6. Sear steak bites in batches for 2-3 minutes per side until browned. Remove and set aside.
  7. Reduce heat to medium-low, add remaining 2 tbsp butter and minced garlic. Sauté for 30 seconds.
  8. Return steak and potatoes to skillet. Toss to coat in garlic butter. Garnish with chopped parsley.
