Ingredients
300 g chicken breast or thighs
250 g tagliatelle pasta
4 cloves garlic, minced
3 cups baby spinach
1 cup canned artichoke hearts, chopped
1 cup heavy cream
60 g cream cheese
60 g grated parmesan cheese
1.5 tsp Cajun seasoning
1 tbsp olive oil
1 tbsp unsalted butter
Salt and pepper, to taste
Instructions
1. Toss cubed chicken with Cajun seasoning, salt, pepper, and garlic.
2. Heat oil and butter in a pan; sear chicken until golden and cooked. Remove and set aside.
3. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water.
4. In the same skillet, add garlic, then stir in cream, cream cheese, and parmesan until smooth.
5. Add spinach and artichokes. Cook until spinach wilts.
6. Toss in pasta and reserved water to loosen sauce as needed.
7. Serve hot with chicken bites on top and extra parmesan.
