Ingredients

1 tablespoon olive oil

1 tablespoon butter (plus more for toasting bread)

2 cups cremini or button mushrooms, sliced

2 garlic cloves, minced

¼ teaspoon salt

¼ teaspoon black pepper

1 teaspoon chopped thyme (optional)

4 slices of sourdough bread

1 cup shredded mozzarella (or slices)

Optional: Swiss, provolone, or fontina cheese for blending


Instructions

  1. In a skillet, heat olive oil and butter over medium. Add mushrooms and cook 8-10 minutes until golden.
  2. Stir in garlic, salt, pepper, and thyme. Cook 1-2 more minutes. Remove from heat.
  3. Butter one side of each bread slice. Layer cheese, mushrooms, more cheese between two slices, buttered side out.
  4. Grill sandwich in a skillet over medium-low heat for 3-4 minutes each side, until bread is golden and cheese melts.
  5. Rest for 1 minute, slice, and serve hot.
