Ingredients

1 lb boneless chicken thighs or breasts

2 eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

2 tbsp butter

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tbsp Cajun seasoning

1/2 tsp smoked paprika

1 sheet puff pastry, thawed

1/2 cup chopped spinach (fresh or thawed)

1/4 cup grated Parmesan cheese

1 egg, beaten (for egg wash)


Instructions

1. Whisk eggs in a bowl.

2. In a separate bowl, mix panko, Parmesan, garlic powder, salt, and pepper.

3. Cut chicken into bite-sized pieces. Dip in egg, then coat in the breadcrumb mixture.

4. Fry or bake chicken until golden brown and cooked through.

5. In a saucepan, melt butter and sauté garlic until fragrant.

6. Add heavy cream and bring to a gentle simmer.

7. Stir in Parmesan, Cajun seasoning, and paprika. Simmer until sauce thickens.

8. Roll out puff pastry and top with chopped spinach and Parmesan.

9. Fold, cut into strips, and twist. Brush with egg wash.

10. Bake twists at 400°F (200°C) for 12–15 minutes until golden.

11. Plate the chicken bites with Cajun Alfredo sauce and spinach twists. Serve hot.

Notes

For extra crunch, double-dip the chicken in egg and breadcrumbs.

Add a pinch of cayenne to the Alfredo if you love more heat.
