Ingredients

1.5 pounds baby Yukon Gold potatoes

2 tablespoons olive oil

3 cloves garlic, minced

1/3 cup grated Parmesan cheese

1 teaspoon dried Italian herbs

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Wash and dry the potatoes. Cut them in half (or quarters if larger).

2. In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and Italian herbs until well coated.

3. Sprinkle in parmesan cheese and toss again, reserving some for topping.

4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange potatoes cut-side down.

5. Roast for 25–30 minutes, or until golden and crispy.

6. Remove from oven, sprinkle with reserved parmesan and parsley. Serve immediately.

Notes

Make sure to place the potatoes cut-side down for maximum crispiness.
