⅓ cup brown sugar (for swirl)

1 teaspoon ground cinnamon (for swirl)


Instructions

1. Preheat your oven to 350°F (175°C). Line a muffin tin with 12 liners.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

3. In a separate bowl, whisk eggs. Then add sugar, applesauce, milk, coconut oil, and vanilla extract. Mix until smooth.

4. Combine the wet and dry mixtures just until incorporated—do not overmix.

5. In a small bowl, mix together the brown sugar and cinnamon for the swirl.

6. Fill each muffin liner halfway with batter. Sprinkle cinnamon-sugar swirl over the batter. Add remaining batter on top.
