Ingredients

1 tablespoon butter

1 tablespoon olive oil

1 small onion, diced

2 medium carrots, sliced thin

2 celery stalks, sliced

3 garlic cloves, minced

3 tablespoons all-purpose flour

4 cups chicken broth

2 cups cooked shredded chicken

16 ounces potato gnocchi

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup heavy cream

2 cups fresh spinach

1/2 cup grated Parmesan cheese


Instructions

1. Heat the butter and olive oil in a large pot over medium heat.

2. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. Sprinkle in the flour and stir well to coat the vegetables. Cook for 1 minute.

5. Slowly pour in the chicken broth while stirring until smooth.

6. Add the Italian seasoning, salt, and black pepper, then bring the soup to a gentle simmer.

7. Stir in the shredded chicken and gnocchi, then cook for 3 to 5 minutes until the gnocchi are tender and floating.

8. Lower the heat and stir in the heavy cream, spinach, and Parmesan cheese.

9. Cook for 2 more minutes until the spinach is wilted and the cheese is melted.

10. Serve hot with extra Parmesan and black pepper if desired.

Notes

Do not boil the soup after adding the cream, or the broth can separate and lose its smooth texture.
