Ingredients

1 lb ground beef

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, chopped

2 celery stalks, chopped

1 bell pepper, chopped

2 medium potatoes, peeled and diced

1 can (14 oz) diced tomatoes

1 can (6 oz) tomato paste

4 cups beef broth

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

1/2 teaspoon black pepper

Salt to taste

Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned.
  2. Add onion and garlic; sauté until translucent.
