Ingredients

1 cup grated zucchini (excess moisture squeezed out)

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg (optional)

1/3 cup honey or maple syrup

1/4 cup brown sugar (optional for added sweetness)

1/3 cup plain Greek yogurt

2 large eggs

1/4 cup melted coconut oil or vegetable oil

1 teaspoon vanilla extract

Optional: 1/2 cup chopped walnuts or chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini and squeeze out as much moisture as possible using a kitchen towel.
  3. In a large bowl, whisk together flours, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, whisk eggs, honey (or syrup), brown sugar (if using), Greek yogurt, oil, and vanilla until smooth.
  5. Combine the wet ingredients with the dry ingredients. Stir until just combined.
  6. Fold in the zucchini and any optional mix-ins like nuts or chocolate chips.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
