Ingredients
2 3-ounce boxes strawberry gelatin
2 cups boiling water
1 1/2 cups cold vodka
1/2 cup cold water
2 teaspoons fresh lemon juice
nonstick spray for molds
black decorating gel or edible marker for faces
Instructions
1. Lightly mist silicone ghost molds or plastic shot cups with nonstick spray, then wipe away any excess so only a thin film remains. Place the molds on a small rimmed baking sheet for easy transport.
2. Add the strawberry gelatin powder to a medium heatproof bowl. Pour in the boiling water and whisk for about 2 minutes, until the gelatin is fully dissolved and the mixture looks clear and smooth.
3. Stir in the cold vodka, cold water, and fresh lemon juice. Whisk gently until everything is evenly combined and the liquid feels cool to the touch. If it is still quite warm, let it sit for 5–10 minutes.
4. Carefully pour the gelatin mixture into each mold cavity or shot cup, leaving a little space at the top of each so they do not spill when you move the tray.
5. Transfer the tray to the refrigerator and chill for at least 4 hours, or until the Jello shots are completely firm. For best results and easiest unmolding, chill them overnight.
6. When ready to serve, gently loosen the edges of each ghost with your fingers, then pop the Jello shots out onto a chilled serving plate.
7. Use black decorating gel or an edible marker to add two eyes and a round mouth to each ghost. Keep refrigerated until serving so they stay cold and hold their shape.
Notes
For a kid-friendly version, replace the vodka with additional cold water or pink juice, and clearly label the alcohol-free tray so everyone knows which ghost is which.
