Ingredients
2 ripe bananas, mashed
2 large eggs
1/4 cup honey or maple syrup
1/4 cup Greek yogurt (plain or vanilla)
1/4 cup unsweetened almond milk (or milk of choice)
1 tsp vanilla extract
1 1/2 cups rolled oats
1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 cup fresh or frozen blueberries
Optional: extra blueberries + oats for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, mash the bananas and whisk in the eggs, honey, yogurt, milk, and vanilla.
- Add the oats, flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly into the muffin cups and top with extra blueberries and a sprinkle of oats.
- Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack.
