Ingredients

2 ripe bananas, mashed

2 large eggs

1/4 cup honey or maple syrup

1/4 cup Greek yogurt (plain or vanilla)

1/4 cup unsweetened almond milk (or milk of choice)

1 tsp vanilla extract

1 1/2 cups rolled oats

1/2 cup whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1 cup fresh or frozen blueberries

Optional: extra blueberries + oats for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, mash the bananas and whisk in the eggs, honey, yogurt, milk, and vanilla.
  3. Add the oats, flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined.
  4. Gently fold in the blueberries.
  5. Divide the batter evenly into the muffin cups and top with extra blueberries and a sprinkle of oats.
  6. Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
  8. Serve warm or store for later!
