Ingredients
1 cup cottage cheese
2 ripe bananas
2 tablespoons maple syrup
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/4 cup chocolate protein powder
1 teaspoon baking powder
1/4 cup dark chocolate chips (plus more for topping)
Instructions
1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
2. Blend cottage cheese, bananas, eggs, vanilla extract, and maple syrup until smooth.
3. In a bowl, whisk cocoa powder, chocolate protein powder, and baking powder.
4. Pour the wet mixture into the dry and stir until just combined.
5. Fold in chocolate chips and pour the batter into the pan. Sprinkle extra chips on top.
6. Bake for 25–28 minutes or until a toothpick inserted comes out mostly clean.
7. Let cool for 10 minutes before slicing into squares.
