Ingredients

1 tablespoon olive oil

1 medium yellow onion, diced

2 cloves garlic, minced

2 medium carrots, chopped

2 stalks celery, chopped

1 green bell pepper, diced

1 (15 oz) can diced tomatoes (with juices)

4 cups vegetable or chicken broth

2 cups cooked black-eyed peas (or 2 cans, drained and rinsed)

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon cumin

Salt and pepper, to taste

½ pound ground turkey or beef (optional)

Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until soft, about 5 minutes. Stir in garlic and cook for another minute.
  2. Add carrots, celery, and bell pepper. Cook 6–8 minutes until vegetables begin to soften.
  3. (Optional) Stir in ground meat. Cook until browned and no longer pink. Drain excess fat.
  4. Add tomatoes, broth, black-eyed peas, smoked paprika, thyme, cumin, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes.
  6. Adjust seasoning as needed. Garnish with chopped parsley.
  7. Serve hot with bread or cornbread on the side.
