Ingredients
1 tablespoon olive oil or butter
14 oz kielbasa sausage, sliced into rounds
1 medium yellow onion, diced
2 cloves garlic, minced
4 cups diced Yukon gold potatoes (about 4 medium)
4 cups low-sodium chicken broth
1 cup milk (whole or 2%)
1/2 cup heavy cream
Salt and freshly ground black pepper, to taste
1/2 teaspoon smoked paprika (optional)
1/2 teaspoon dried thyme
1 tablespoon chopped fresh parsley (for garnish)
Instructions
- In a large soup pot, heat olive oil or butter over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
- In the same pot, add diced onion. Cook for 3–4 minutes until soft. Stir in garlic and cook for another 30 seconds.
- Add potatoes, paprika, thyme, salt, and pepper. Pour in the chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes until potatoes are tender.
- Return kielbasa to the pot. Stir in milk and heavy cream. Simmer uncovered for another 5–10 minutes.
- Taste and adjust seasoning. Serve hot, garnished with fresh parsley.
