Ingredients

1 tablespoon olive oil

1 pound ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (15 oz) diced tomatoes

2 tablespoons tomato paste

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

0.5 teaspoon salt

0.25 teaspoon black pepper

2 cups chicken broth


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion and bell peppers and sauté until softened, about 5 minutes.

2. Stir in the garlic and cook for 1 more minute until fragrant.

3. Add ground turkey and cook until no longer pink, breaking it apart with a spoon.

4. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Stir and let cook for 2 minutes to bloom the spices.

5. Mix in tomato paste and diced tomatoes. Pour in chicken broth and stir well.

6. Add kidney and black beans. Bring to a simmer.

7. Reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally.

8. Adjust seasoning if needed. Serve hot with your favorite toppings.

Let the chili rest 10 minutes before serving to deepen flavor.
