Ingredients
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
2 tablespoons butter
5 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 cup chicken broth
3 tablespoons fresh lemon juice
1 lemon, thinly sliced
1 tablespoon fresh thyme leaves
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the chicken thighs dry with paper towels and season both sides with salt, black pepper, paprika, and dried oregano.
2. Heat the olive oil in a large skillet over medium-high heat. Place the chicken thighs in the pan and sear until deeply golden on the first side, about 6 to 8 minutes.
3. Flip the chicken and cook the second side for 4 to 5 minutes until browned. Transfer the chicken to a plate if needed.
4. Lower the heat to medium and add the butter to the skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant.
5. Add the fresh thyme, chicken broth, and lemon juice. Scrape up the browned bits from the bottom of the skillet.
6. Return the chicken thighs to the pan and tuck in the lemon slices around the chicken.
7. Cover loosely and simmer for 15 to 20 minutes, or until the chicken is fully cooked and reaches 165°F internally.
8. Spoon the sauce over the chicken, sprinkle with chopped parsley, and serve warm.
