Ingredients
1 cup cottage cheese
3/4 cup Fairlife 2% milk
1 scoop vanilla protein powder
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 pinch salt
1 tablespoon rainbow sprinkles, optional
1 to 2 tablespoons milk for re-spin, as needed
Instructions
1. Add the cottage cheese, Fairlife milk, vanilla protein powder, maple syrup, vanilla extract, and salt to a blender.
2. Blend until the mixture is completely smooth with no visible cottage cheese curds.
3. Pour the mixture into a Ninja Creami pint container and smooth the top.
4. Cover with the lid and freeze on a flat surface for 18 to 24 hours, until fully solid.
5. Remove the lid and process on the Lite Ice Cream setting or Ice Cream setting, depending on your preferred texture.
6. If the texture looks crumbly after the first spin, add 1 to 2 tablespoons milk and run a re-spin cycle.
7. Add sprinkles if using, then run the Mix-In cycle or fold them in by hand.
8. Scoop and serve immediately.
Notes
Do not skip blending the base until fully smooth, because any remaining cottage cheese curds can affect the final texture after freezing and spinning.
