Ingredients

12 ounces penne pasta

4 cups broccoli florets

2 tablespoons olive oil

4 cloves garlic, minced

3 cups shredded rotisserie chicken

4 ounces low-fat cream cheese, softened

1 cup plain Greek yogurt

1 cup low-sodium chicken broth

3/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

2 tablespoons chopped parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the penne until al dente. Add the broccoli during the last 2 to 3 minutes of cooking, then drain and set aside.

2. Heat the olive oil in a large skillet or pot over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.

3. Pour in the chicken broth, then stir in the softened cream cheese until mostly melted and smooth.

4. Lower the heat and mix in the Greek yogurt, Parmesan cheese, Italian seasoning, salt, black pepper, and red pepper flakes. Stir until the sauce is creamy and well combined.

Notes
